Directions:
2 rabbits, cut up in pieces 1/4 c. flour garlic salt black pepper 2 T. oil 1/2 tsp. oregano 1/4 tsp. ground cloves 1 4 oz. can sliced mushrooms, drained 1 med. green pepper, sliced into strips 2 onions, sliced 1 rib of celery, chopped 1 15 oz. can tomato sauce 1 small 2 oz. can ripe, sliced olives
Shake the rabbit pieces in a bag with flour, salt and pepper. In a Dutch oven saute the pieces in oil until golden brown.
Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hr., or rabbit is tender.
Stir in black olives simmer 10 mins. more.
Serve with rice or noodles if desired. |
